Gas Vs. Electric...

From the bakery dept...

What is your preference for cooker/stove and oven? Gas or Electric --- provided you have a choice.

I have each (at different locations and both at one location).

I think there is no difference.

well some stews can not be made in the electonic oven, they need real fire! but if this is just abt bakery, then there is no difference I think.

For baking you're better off with an electric convection oven as there's more control over the temperature and distribution of it.

For using things like woks, frying pans etc gas is definately preferable.

The thing I find with electric ovens is that they give a more evenly distributed heat which is important for baking. What I like with gas cookers is I can better "tell" how much heat is being generated by the size of the flame.

That's my feeling too. Others swear by electric.
