Is a Degree needed by an employee for an employer to Sponsor and obtain a work visa in Dubai for an Australian Citizen ?
Ive had several interviews and been offered a Job in Dubai although have read a few posts regarding the need for a Degree to obtain a work visa in Dubai

Not as such but it's definitely preferred and makes it easier.
There's different requirements for different sponsorship levels.

It depends on the job you are applying for. Say for instance, you do not have a degree and they job that you apply for is Credit Manager at a bank it will most likely be rejected. On the other hand if you are applying for a sales related job and don't have a degree it should be ok.

if your employer is aware you don't have a degree and you are given a job offer then it should not be a problem. Companies in freezones dont have the requirement of presenting degrees, so does certain jobs outside of the freezones. I know someone who is a manging director of a company outside of the freezones but has no degree so his title on the residency visa is some low level position that doesnt require a degree.
so the key thing is to be honest with your prospective employer and you should be fine.
