I'll be taking a position in Dubai with my company ( currently in Canada) who will arrange everything for me. Will my spouse be able to work under my work visa. My info would be helpful. TIA.

Yes, but it could take a few months depending how the bureaucracy feels. The day you get your visa you can apply for her.
Once she gets it, you need to write "no objection" letters in Arabic (you can get them translated cheaply) for her to work, drive etc.
In practice, most companies will let her work from the day you have your visa
