What’s the scenarios of leaving employment and heading back home (UK) I’m lead to believe that you have to pick the right window of opportunity or you will be liable to pay back tax’s?

Ask a tax consultant and/or check the UK tax department website.
It depends on whether the UK decides if you are resident for tax (not the same as actually living in the UK) while you were away. It will probably be yes if you haven't been away from 01 April to 31 March in the year prior to your return. There are many other factors.

Some rules exist as far as I know.
1) If you spend less than one year out of the UK, you will be liable for income tax.
2) If you spen more than one year out of the UK but do not spend a fiscal year (April to April) you will be liable for partial income tax.
If you spend more than a fiscal year (April to April) you will not be liable for income tax.
You should however check with a proper tax consultant.
