Same here - we're heading in the direction of Dubai in a couple of weeks time. Just for a few days though, so really want to make the most of what little time we have.
Would welcome any advice about best things to see & do (day & night) and practical things such as weather, geting around, maybe even costs of eating out.

The current weather is HOT and HUMID :) tempratures upto beyond 40 deg centigrade.
Clothes - light colored, cotton, cap a must, sun glasses with UV protection.
For the first timers - the Big bus tour is a must, a visit to the dubai museum, wild wadi water park, ski dubai.
Night time - Go to madinat for a dinner, ample of pubs to hit.
And yes i know u would love to shop so all the shopping malls are gonna be on your hit list city center, mall of the emirates and ibn batuta are a must go.
Hmm thats what came to my mind:) people will add more.

Jeevan gave you some of the information.
Basically any travel guide you pick up will have all the sites. Once here grab a copy of Time-out-Dubai (for restaurants, clubs and current events).
As to sites etc. check out this thread &highlight=#177009 it mentions many of the sites which some absolute nuts covered in 54 hours but should take a sane person at least a week to do...

Big bus in the summer? Really? Yes, if you want to get fried being 2-3 hours under the heat with roofless bus :D
Desert safari also may be a good choice (if you stay in the 4x4 car).

Hi,
The previous posts pretty much covered what you can do in Dubai.
If you have time, I would also recommend a trip to Ajman, personally the beach there is great and it's not too far a drive and the place is not as commercialized as Dubai.
Few others: a boat ride around the creek or catching the water taxi's that ply the creek.
For what its worth, this summer has not been as hot as last year.
