I cannot find an online resource anywhere that talks about UAE employment law. Can anyone point me in the right direction.

it's called the "federal law of 1980 - No. 8", "Regulating labour relations"
you should find a few references to it on line, just remember that it is the UAE Federal law, the labour law in the emirate of Dubai does deviate slightly to the way its implimented.
