I've done the run at 6am and it takes 25 minutes
At 10:30pm it took 35 minutes
In the middle of the day or rush hour? Who Knows? In the mornings maybe up to 45 minutes. In the afternoon up to 2 hours

How long, generally speaking, does it take to drive from Interchange 5 on Sheikh Zayed Road to the airport. When is the traffic, between the two spots, the worst? For example, is the traffic generally heavier in the mornings going to the airport and heavier in the evenings coming from the airport? Thanks!

The best bet would be to try to arrive/leave on late night flights!
In fact, there are quite a few evening flights to/from Dubai to various cities.
