as an employee the biggest drawcard is that you can't be banned (labour or immigration) if you transfer off of your sponsors visa - which happens if you try it outside of the FZ.
as an employer you can set up a business in the FZ without the involvement of a local sponsor (profit share/ lisence expense etc...). as an employer or business you pay your lisence fees, office rental, warehouse rental etc to the FZ company. in addition in the FZ there is no tax or taxes on company earnings. similar to an offshore business.

Assuming your contract reflects this and your visa is processed accordingly. You'll find a lot of the labourers are still bound contractually and the employer can still enforce labour bans.
Outside the FZ the employer is allowed to waive the ban.

out of the FZ
any restraint of trade imposed by an employer has to be registered (or specifically included) with your labour contract with the department of labour. if it is not, it is not enforcible, and not worth the paper its printed on.
outside of the FZ the current manditory 6 month labour ban is imposed unless your sponsor provides you with an NOC (unless this has changed AGAIN)..
